If you’ve read my recipes, you might pick up on the fact that I love sausage and peppers. It’s just one of my favorite combinations. Probably due to all the sausage and pepper subs I got while tailgating at OSU over the years. This recipe focuses on health a little more than that football classic, as it uses turkey kielbasa to cut fat and farro (a healthier grain.) I hope you enjoy!
Turkey Kielbasa and Pepper Farro
- 1 Cup Farro cooked
- 2 T Butter
- 2 Links Turkey Kielbasa
- 1/4 Cup Bell pepper diced
- 1 oz Cream cheese
- 1/3 Cup Chicken broth
- Place butter in a cold pan, then turn the heat to medium. Add kielbasa and peppers, cook for 7-10 minutes, stirring a couple times.
- Add farro and cook another 5 minutes.
- Add cream cheese and broth and cook for 5 minutes, until the sauce thickens.
