My Italian grilled cheese was made from convenience. I was in the mood for a grilled cheese, but when I went for the American cheese, we were out. I looked around and saw that there was cottage cheese, and we had some pepperoni, so I figured why not. The result was a gooey, cheesy sandwich that I could dip in pizza sauce.
Italian Gooey Grilled Cheese
- 4 oz Cottage cheese
- 12 Slices Pepperoni
- ¼ Cup Mozzarella
- 2 Slices Bread
- 1 TB Butter
- ¼ Cups Pizza sauce
- Heat pan to medium.
- Butter one side of the first piece of bread and place butter side down on a plate. Cover the bread with cottage cheese. Layout your pepperoni slices. Top with mozzarella.
- Place the second piece of bread on top and butter the top.
- Place in the pan and cook for 4-5 minutes, or until the bread is a nice golden color. Flip and cook for another 4-5 minutes.
- Remove from the pan and enjoy with the pizza sauce on the side for dipping!
