You probably would think stir fry when you’re looking for a healthy meal, but this one checks a lot of boxes. You’ve got brown rice, broccoli and a little protein to round it out. I like adding the pork because while it does add a small amount of fat, it adds flavor. It’s a quick meal to put together which is another huge plus for me. This would be a great option to cook ahead for weekday lunches.
Broccoli and Pork Fried Rice

Ingredients
- 1 Cup Brown rice
- 1 ½ TB Vegetable oil
- 2 Broccoli crowns
- 2 Carrots
- ½ Onion
- ½ Red pepper
- ½ lb Ground pork
Sauce
- 2 TB Sugar
- 1/3 Cup Soy sauce
- 1 T Oyster sauce
- ½ T Ginger
- ½ T Garlic
- 3 Green onion
Instructions
- Cook rice according to package.
- Heat large pan over high heat. Add oil and heat for a couple minutes.
- Add Broccoli, onion, pepper and carrots and stir fry for 5-7 minutes, until the broccoli get a little softer, but not really fork tender.
- Add the pork and break up with your utensil, stirring continuously. Cook for 4-5 minutes.
- Add all sauce ingredients to a small bowl and mix well. Add the mixture, along with the rice into the pan and mix. Cook for an additional 5-8 minutes.
