Ham Bone Soup

I believe in using all that I can while I cook. I love to store bacon drippings, use apple peels (really any fruit peels) and bones from previous meals. A ham shank will never be picked clean, no matter how much you work to get all the meat off the bone, you can’t get it all. That’s what makes this recipe so amazing, you use that meat and bone as a base. Boil the bone gives the broth a rich and deep flavor that you can get just by adding some ham chunks to a soup. This was one of my mother’s favorites, so I hope you enjoy!

Ingredients

  • Bone from a ten lb ham shank
  • 9 Cups Water
  • 1 Potato
  • 1/2 Red bell pepper
  • 2 cloves Garlic
  • 2 Carrots
  • 1 Onion
  • 1/2 T Salt
  • 1 TB Heavy cream
  • 1 TB Butter
  • 1 TB Olive oil
  • 2 Bay leaves

Instructions

  • In a large pot, such as a Dutch oven, heat oil and butter over medium.
  • Add onions, carrots and red bell peppers to the pot and cook, stirring occasionally, for 10 minutes.
  • Add garlic and cook for 1-2 minutes.
  • Add the bone and the 9 cups of water, bring to a boil, then reduce to a simmer. Cook for one hour.
  • Remove the bone and discard.
  • Add potato, salt, bay leaves and cream. Cook uncovered for 20-25 minutes.
