Eggnog is one of those things I wish was sold year round. It probably is somewhere, just not at my grocery store. I can't get enough of the flavors, so I decided to add it to one of my favorite meals, pancakes! By adding the eggnog, the pancakes have a little extra sweetness, and a hint of the eggnog. It's a perfect way to embrace the drink and the Christmas season.

Ingredients
- 1/3 Cup Eggnog
- 2/3 Cup Pancake mix
- 1/4 Cup Milk
- Syrup to serve
Instructions
- Combine the mix, milk and eggnog in a bowl and mix. Let sit for about 8-10 minutes, so the pancakes will be fluffy.
- Heat a large pan over medium and spray with cooking spray. Add 1/4 cup of the batter for each pancake to the pan and let cook for 5 minutes.
- Flip pancake and cook another 4-5 minutes.
- Remove from the pan and serve with syrup and enjoy!
