While sitting by the pool during the summer, there's nothing better than to sit back and sip on a mojito. The bright and fresh ingredients are a summer time classic for me. For a normal mojito, I always feel like it needs a little more sugar, it's never sweet enough for me. So this recipe amps up the sweetness making it really hard to put down. I hope you enjoy!
Sweet Mint Mojito
- .75 oz. Mint fresh
- 1 Cup Sugar
- 1.5 Cup Water
- 2 liter Club Soda
- 5 Limes juiced
- Mix water and sugar in a pot and heat over medium. Cook until the sugar is dissolved. Add mint and simmer over low heat for 20 minutes. Allow to cool to room temperature.
- To make the individual drinks to taste, I have a shaker, but you can do it in a separate glass. Mix in 1 TB of the mint simple syrup, 1 TB of the lime juice and 1 or 2 shots of rum. Stir or shake well.
- In the serving glass, fill generously with ice and pour in the mojito mixture made in the previous step. Finish by filling the rest of the glass with club soda. Enjoy!
