Sweet Mint Mojito

While sitting by the pool during the summer, there's nothing better than to sit back and sip on a mojito. The bright and fresh ingredients are a summer time classic for me. For a normal mojito, I always feel like it needs a little more sugar, it's never sweet enough for me. So this recipe amps up the sweetness making it really hard to put down. I hope you enjoy!

Ingredients

  • .75 oz. Mint fresh
  • 1 Cup Sugar
  • 1.5 Cup Water
  • Rum
  • 2 liter Club Soda
  • 5 Limes juiced

Instructions

  • Mix water and sugar in a pot and heat over medium. Cook until the sugar is dissolved. Add mint and simmer over low heat for 20 minutes. Allow to cool to room temperature.
  • To make the individual drinks to taste, I have a shaker, but you can do it in a separate glass. Mix in 1 TB of the mint simple syrup, 1 TB of the lime juice and 1 or 2 shots of rum. Stir or shake well.
  • In the serving glass, fill generously with ice and pour in the mojito mixture made in the previous step. Finish by filling the rest of the glass with club soda. Enjoy!

Notes

It's important to change the ingredients to taste, if you prefer it to be sweeter, add more syrup, if you want more of a punch of lime, add more.
