Homemade chicken gyros are an amazing dish for everyone in the family. Instead of using the normal lamb, I go with grilled chicken seasoned with coriander and cumin which gives it a really nice flavor. Marinate the chicken in the spice mixture for 30 minutes, throw it on the grill and enjoy tender juicy chicken with loads of flavor. I hope you enjoy!

Ingredients
- 1.5 lb. Chicken breast
- 8 Pita Shells
- My Tzatziki or store bought
- My Cucumber Salad or finely chopped lettuce
Seasoning
- 2 T Coriander Ground
- ½ T Cumin
- ½ T Garlic salt
- ¼ T Onion powder
- ½ T Salt
- 2 TB Grapeseed oil
Instructions
- Remove chicken from package and cut away any at connective tissue. Butterfly the chicken breast so it cooks faster. Place into a baking dish with Seasoning ingredients.
- Add chicken let sit for 30 minutes.
- Heat grill to medium high.
- Place chicken on the grill and cook for 7 minutes, flip and then cook for another 7 minutes. Make sure that the meat is cooked all the way through and is no longer pink.
- Remove from grill, cover and keep warm. Wait at least 5 minutes.
- Put chicken on a cutting board and cut into strips.
- Add chicken to a pita shell and top with my Tzatziki sauce and cucumber salad (or your favorite toppings.) Enjoy!

- ½ Cucumber peeled and small dice
- ½ tsp Salt
- 3 cloves Garlic roasted
- 1 teaspoon Rice vinegar
- 1 teaspoon Dill
- 1 cup Greek yogurt
- 1 Tablespoon Grape seed oil

Ingredients
- 1 ½ Cucumber
- 1 Tomato large
- ¾ Cup Grape tomato
- 2 TB Grapeseed oil
- ½ TB Dill fresh
- ¾ Cup Feta
- ¼ Cup Red onion diced
- ½ T Salt
Instructions
- For the cucumber, peel and remove seeds. Cut into bitesize pieces and add to a large bowl.
- Cut grape tomatoes in half and add to bowl.
- Cut tomato into quarters and then remove the seeds and pulp, then cut into smaller pieces. Add to the bowl along with the diced red onion and fresh dill.
- Add grape seed oil and salt. Stir to combine.
- Serve with feta on the side and enjoy!
