Pumpkin Spice Latte Dessert – Pumpkin Blondie

I love pumpkin spice lattes. I'll admit it, I'm addicted to them. Whenever the weather dips below 70, it's an obligation to grab one. You can get pumpkin spice in almost any form these days, so I thought putting it in a dessert would be a good way to enjoy the flavor. The pumpkin spice blondie packs a lot of pumpkin flavor and the coffee whipped cream is absolutely amazing (my oldest wanted to eat a bowl of it.) I hope you enjoy the recipe and happy fall!

Ingredients

Pumpkin Spice Blondie

  • 2 Eggs
  • 1 T Baking powder
  • ½ T Baking soda
  • ½ Cup Whole wheat flour
  • ½ Cup Brown sugar
  • 1 Cup Pumpkin
  • 1 TB Pumpkin pie spice
  • ½ Cup Butter melted
  • ½ Cup Sugar
  • ¼ Cup Water
  • ¼ T Salt

Coffee Whipped Cream

  • 1 Cup Coffee
  • 1 Cup Heavy Cream
  • ½ Cup powder sugar

Instructions

Pumpkin Spice Blondie

  • Preheat the oven to 350 degrees.
  • Sift flour, baking soda, baking powder and salt into a bowl.
  • Add sugar and pumpkin pie spice to the flour mixture.
  • In another bowl, add pumpkin, eggs, butter, brown sugar, eggs and water. Mix well.
  • Gradually add the dry ingredients into the wet mixture.
  • Spray a 13x9 inch pan with oil. Pour mixture into the pan and place in the oven. Cook for 30 – 35 minutes, until toothpick comes out clean.

Whipped Cream

  • Add coffee to a small pot and bring to a boil. Reduce heat to low and reduce until 1/3 cup remains.
  • Cool the coffee mixture.
  • Pour the heavy cream into a bowl and beat with a hand mixer (or you can do this in a stand mixer) until it starts to fluff up. Add 1 TB of the coffee reduction.
  • Slowly add the powdered sugar until the cream starts to thicken into a whipped cream.
