Dairy Free Crepes (dairy version at the bottom)

My kids love my crepes! I try to keep it as simple as possible. For this recipe, I'm going to go with a dairy free approach, because 2 of my kids are dairy free eaters! I really think that this is one of those recipes where it really doesn't matter whether it's dairy-free or not, it still tastes amazing!

Ingredients:

2 1/2 Cups flour
1 Cup dairy free milk (I used soy milk)
1 Cup water
3 Tablespoons of dairy free butter (I used smart balance)
1 Teaspoon of salt
4 Eggs
Dairy free cream cheese filling
Berry sauce to top

Blend the batter ingredients (first 6 ingredients) in a blender.

Some people say to start with the eggs and flour together first, but when my kids start screaming for food, nah, I just dump.

Heat a medium sized pan over medium heat and spray with a little cooking oil. Spoon some batter and twirl the pan so that the batter coats the bottom of the pan, it’s about 1/3 of a cup.

Wait until it doesn’t look “wet” anymore, about 2 minutes, and then flip. After another 1 minute, slide off onto a plate.

Fill the center of the crepe with cream cheese filling and then roll. Serve with my Berry Awesome sauce. This is an amazing way to start the day!!

An alternative approach is a crepe filled with strawberry jelly, dusted with powdered sugar.

Just add strawberry jelly to the finished crepe, fold and then roll into a log. Dust with powdered sugar and that’s it!! I like to make a batch, sticking each crepe in a warm oven (170 degrees) until it’s time to eat them.
