Sorghum is my new kick, I think it's is a very easy ingredient that takes on flavors really well. Another ingredient that I absolutely love? Feta!! It's one of my food groups. This recipe incorporates MIND healthy tomato and olive oil, as well as fresh dill and cucumbers.
1 Cup Sorghum
1/3 Small red onion
1 Large tomato
1 Cucumber (peeled or not)
1 1/2 Tablespoons of fresh dill chopped fine
2 Tablespoons grape seed oil
1 Teaspoon of salt
1/3 Cup feta cheese
Start by cooking the sorghum. This takes about 60 minutes, so I usually do this the night before, especially since it's a cold salad.
Dice the tomato, onion and cucumber and add to the sorghum.
Add the olive oil, dill and salt. Stir everything to combine.
Serve with feta on the side to top. Enjoy with your favorite perfectly grilled pork shop or chicken.
